Mixed Berry Baked Oatmeal with Chocolate Chips

This is a variation on the Baked Oatmeal trend make popular on Instagram and TikTok. The oats are blended here, rather than baked whole, to give the finished product a cake-like consistency. This is a base recipe to which you can customize a myriad of ways. It really does taste like you’re having cake for breakfast! How bad could that be?

INGREDIENTS

  • 1/2 cup old fashioned oats

  • 1 egg

  • 1/2 banana (or 1/4 cup applesauce)

  • 1/4 cup cow or plant milk of choice

  • 1/4 tsp. baking powder

  • tiny pinch of salt

  • see note about additional add-ins and spices

  • sweetener (optional and per your choice)

I don’t use sweetener as I like to add it afterwards (with yogurt) but 1-2 tablespoons of granulated sugar, brown sugar, maple syrup or honey should suffice depending on how sweet you want to go. Sugar substitute can also be used.

INSTRUCTIONS

You will need some type of blender device - either immersion, NutriBullet or standing blender. Pre-heat oven to 375 degrees, lightly coat an 8 oz ramekin with cooking spray and set aside. Mix all ingredients until smooth. You want the oatmeal to breakdown into a batter-like consistency, this is what gives the final result a cakey texture. Stir in any add-ins and pour batter into prepared ramekin. Fruit like blueberries are best sprinkled on top so they don’t sink to the bottom during the baking process. Bake for 20-25 minutes (some add-ins may take longer). Let cool, add any additional toppings and enjoy!

SUGGESTED VARIATIONS

CARROT CAKE

  • 1/2 cup grated carrots

  • 1 tablespoon raisins

  • 1/4 tsp. vanilla

  • 1/4 tsp. pumpkin spice seasoning

Stir into blended batter and bake as instructed. Serve with vanilla greek yogurt and drizzle of honey.

CHOCOLATE PEANUT BUTTER

  • 2 tablespoons mini chocolate chips

  • 1 tablespoon peanut butter

  • 1/4 teaspoon vanilla

Stir chocolate chips into the batter and bake as instructed. Microwave peanut butter for 10-20 seconds, drizzle over baked oatmeal.

OATMEAL RAISIN COOKIE

  • 2 tablespoons raisins

  • 1 tablespoon whole oats

  • 1/4 tsp. cinnamon

  • 1/4 tsp. vanilla

Stir into blended batter and bake as instructed. Serve with vanilla greek yogurt and drizzle of honey.

BLUEBERRY MUFFIN

  • 1/4 cup frozen or fresh blueberries

  • 1/4 tsp. cinnamon

Add cinnamon to the batter, pour into a ramekin, top with blueberries and bake as instructed. Serve with vanilla greek yogurt and drizzle of honey.

APPLE PIE

  • 1/4 cup diced apples

  • 1/4 tsp. cinnamon

  • 1/4 tsp. vanilla

Stir apples and cinnamon into the batter, top with additional diced apples and bake as instructed. Serve with vanilla greek yogurt and drizzle of honey.

CHOCOLATE CAKE

  • 2 tablespoons mini chocolate chips

  • 1/4 cup applesauce (instead of the banana)

  • 1/4 tsp. vanilla

  • 1 1/2 tablespoon unsweetened cocoa powder

  • 2 tablespoons granulated sugar

  • 1/2 tsp. coffee crystals (optional but coffee is known to enhance the flavor of chocolate)

Add everything (except chocolate chips) to the base ingredients and blend, stir in the chocolate chips and reserve a little for sprinkling on top, bake as proceeded. Applesauce gives a cleaner flavor while bananas taste more like chocolate banana bread, which isn’t a bad thing either.

FAQ’S

I don’t have an 8 oz ramekin, what else can I use?

  • Use a muffin tin and divide the batter into 3-4 wells, depending on your add-ins and how much batter you have. Reduce baking time to 18-20 minutes. You don’t need to use muffin liners but they will make the oatmeal transportable allowing you to take it on the go for a quick snack.

Can I bake this in advance and keep it in the refrigerator?

  • Yes, it will keep up to 3-4 days in the refrigerator. Just microwave and have at it.

I’m vegan or I don’t eat eggs, what else can I use?

  • I have not tried making this with an egg replacer but you can always give it a whirl and report back with your findings.

Can I use steel cut oats instead of rolled oats?

  • Yes, you can but the texture will be slightly different as the steel cut oats are harder for the blender to break down.

Does blending down the oats increase the glycemic load?

  • I had the same question myself and found conflicting answers on the internets. I’m also not a nutritionist or scientist and therefore not able to answer this question with authority or accuracy. I have noticed that if I pair it with a protein like Greek yogurt or a hard boiled egg, I do stay full longer, but that’s just me.

I don’t have a blending device, what do I do?

  • Unfortunately, you can’t make this without a blender. Drop hints to your family and friends for a birthday gift or invest in one (you can pickup a decent model for less than $50). I’ve had the same Braun 200 Watt immersion blender for almost 15 years and use it almost daily. It’s the gift that keeps on giving.

Can I double the recipe?

  • Yes, because who needs 1/2 a banana laying around?

I hate bananas, they make me dry heave. What can I use instead?

  • As the recipe mentions, you can use 1/4 cup applesauce instead or try pumpkin puree (although the pumpkin will change the flavor of the finished product).

I don’t have any baking powder, will that be a problem?

  • Yes, it’s a huge problem! Unfortunately, the recipe will not work without baking powder since it is the main leavening agent. Sorry, blame science!

Help! I have a gummy, runny, gooey mess on my hands. What happened?

  • Try baking it a little longer as all ovens are calibrated differently. Too much milk, applesauce, a larger than normal banana, or too many add-in can also result in a gummy texture. Use less liquid next time. Another culprit could be expired baking powder.
