Easy Peasy Blondies

This is my official name for these cookies bars because they come together in less than 45 minutes from start to finish. It’s perfect for when you’re craving something late night and you want a decadent dessert super quick. No need to cream the butter or pull out the Kitchen-Aid, one bowl and a pan is all you need. You can customize it with anything you wish - macadamia nuts, toffee chips, walnuts, white chocolate, dark chocolate, pretzels, Altoids — knock yourself out. Serve it warm from the oven with a scoop of vanilla ice cream for an impressive dessert for a dinner party. If someone doesn’t love warm cookies and ice cream, they are not your friends!

The recipe calls for browned butter which sounds more complicated than it really is. You melt the butter and wait for brown bits to appear at the bottom of the pan. The only effort is trying to reach this stage without burning it completely. Not something to do while scrolling Instagram, you need to keep your eye on the prize. The texture is more of a dense cookie bar than a fluffy cake type (no baking soda or powder in the recipe).
