New Burrata Pomodoro

We are debuting a new burrata today to replace the Figs which are now out of season.

BURRATA POMDORO

I know tomatoes scream summer but this is a winterized version utilizing tomato preserves. Many folks can summer tomatoes and make preserves to enjoy in the winter months and this is a play off that idea. Tomato preserves are layered at the bottom, creamy Lioni burrata on top and a dollop of tomatoes prepared bruschetta style to finish it off. We use heirloom/rainbow cherry tomatoes to make the fresh tomato bruschetta which are available year round. Our grilled rustic bread served alongside.

TOMATO PRESERVES

  • roma tomatoes

  • sugar

  • jalapeno

  • cloves

  • ginger

  • cumin

The tomato preserves themselves are allium free and gluten free.

TOMATO BRUSCHETTA (bruschetta normally refers to just the bread portion but I’m using this here as it’s easier than saying tomato salsa).

  • heirloom cherry tomatoes

  • garlic

  • red onion

  • basil

  • salt

  • olive oil

  • balsamic vinegar

The tomato bruschetta cannot be made without the alliums. We are not able to pull together the bruschetta a la minute. It is gluten free however.

DIETARY RESTRICTIONS

  • GLUTEN FREE: sub gluten free crackers

  • ALLIUM FREE: you would have to forego the tomato bruschetta

  • VEGETARIAN: no meat products used in the dish

  • SUGAR FREE: Just skip the tomato preserves and order extra bruschetta
